
Spinach Salad
This is our favorite spinach salad! It’s simple but so delicious—fresh strawberries, crispy bacon, creamy goat cheese, and a tangy balsamic vinaigrette make the perfect side salad. Add some grilled chicken, and you've got a complete meal!
Ingredients
For The Dressing
- 1 1/2 tsp Dijon mustard
- 1 tbsp maple syrup
- 1 1/2 tbsp balsamic vinegar
- 1/3 cup olive oil
For the Salad
- 3/4 cup chopped pecans toasted
- 10 cups baby spinach washed
- 3/4 cup bacon cooked and crumbled
- 1 lb strawberries sliced
- 1 cup red onion thinly sliced
- 4 oz goat cheese crumbled
Instructions
The Dressing
- Add the mustard, balsamic vinegar, and maple syrup to a bowl and whisk.
- Slowly drizzle in the olive oil while whisking to emulsify the dressing.
- Add salt and pepper to taste.
The Salad
- Add the spinach, strawberries, red onions, and bacon to a large bowl.
- Pour the dressing over the salad and toss well.
- Top with the pecans and crumbled goat cheese.
