If you’re like us and keep chickens, you know there are seasons when the eggs are abundant but time is short. During those busy weeks, an egg bake becomes a staple in our kitchen.
It’s the perfect way to use up leftover vegetables, bits of cheese, and extra meat tucked away in the refrigerator. Nothing has to go to waste, and you can customize it with whatever ingredients you have available.

Egg Bake
Ingredients
- 10-12 eggs
- 2 cup cooked vegetables
- 2 cup grated cheese
- 1/2 cup heavy cream or milk
- 5 slices bacon cooked and crumbled
- butter to grease the dish
- fresh herbs if desired chopped
- salt and pepper to taste
Instructions
- Butter a 6×10 or 8×8 dish
- Pre-heat oven to 350 degrees
- Whisk eggs until well beaten. Add cream, salt, and pepper, whisk until combined.
- Layer vegetables, bacon, and cheese in the dish.
- Add herbs if using
- Pour the egg mixture over the top of the casserole and gently cover the ingredients with the eggs using a fork.
- Bake for 25- 30 minutes or until center is set.
