Spinach Salad
This is our favorite spinach salad! It’s simple but so delicious—fresh strawberries, crispy bacon, creamy goat cheese, and a tangy balsamic vinaigrette make the perfect side salad. Add some grilled chicken, and you've got a complete meal!
For The Dressing
- 1 1/2 tsp Dijon mustard
- 1 tbsp maple syrup
- 1 1/2 tbsp balsamic vinegar
- 1/3 cup olive oil
For the Salad
- 3/4 cup chopped pecans toasted
- 10 cups baby spinach washed
- 3/4 cup bacon cooked and crumbled
- 1 lb strawberries sliced
- 1 cup red onion thinly sliced
- 4 oz goat cheese crumbled
The Dressing
Add the mustard, balsamic vinegar, and maple syrup to a bowl and whisk.
Slowly drizzle in the olive oil while whisking to emulsify the dressing.
Add salt and pepper to taste.
The Salad
Add the spinach, strawberries, red onions, and bacon to a large bowl.
Pour the dressing over the salad and toss well.
Top with the pecans and crumbled goat cheese.
