Spinach Salad

This is our favorite spinach salad! It’s simple but so delicious—fresh strawberries, crispy bacon, creamy goat cheese, and a tangy balsamic vinaigrette make the perfect side salad. Add some grilled chicken, and you've got a complete meal!

Ingredients

For The Dressing

  • 1 1/2 tsp Dijon mustard
  • 1 tbsp maple syrup
  • 1 1/2 tbsp balsamic vinegar
  • 1/3 cup olive oil

For the Salad

  • 3/4 cup chopped pecans toasted
  • 10 cups baby spinach washed
  • 3/4 cup bacon cooked and crumbled
  • 1 lb strawberries sliced
  • 1 cup red onion thinly sliced
  • 4 oz goat cheese crumbled

Instructions

The Dressing

  • Add the mustard, balsamic vinegar, and maple syrup to a bowl and whisk.
  • Slowly drizzle in the olive oil while whisking to emulsify the dressing.
  • Add salt and pepper to taste.

The Salad

  • Add the spinach, strawberries, red onions, and bacon to a large bowl.
  • Pour the dressing over the salad and toss well.
  • Top with the pecans and crumbled goat cheese.
