Peach and Blackberry Cobbler
This Cobbler is seriously the most delicious summer treat! It is perfectly paired with ice cream or just topped with whipped cream!
Ingredients
Filling
- 4 cup peeled chopped peaches, frozen or fresh
- 4 cup blackberries
- 2/3 cup brown sugar
- 2 Tbs lemon juice
- 1 tsp salt
- 3 Tbs arrowroot Use heaping Tbs, and if your fruit has a lot of liquid add another heaping Tbs of arrow root.
- 1 tsp ground cinnamon
Batter
- 1 1/2 cup all purpose flour
- 1 1/2 tsp baking powder
- 1 tsp salt
- zest 1 lemon
- 1 stick butter cut into small pieces
- 1/3 cup boiling water
Topping
- 1 tsp sugar
- 1 tsp tsp Cinnamon
Instructions
- For the filling add peaches, berries, brown sugar, lemon juice, arrowroot and cinnamon to a bowl. Mix gently and let sit while you prepare the batter.
- In a large bowl, whisk together the flour, brown sugar, baking powder, salt and lemon zest. Add the butter and cut in with a pastry blender until crumbly. Pour in boiling water and stir until combined.
- Pour fruit into a dish and spoon batter mixture over the fruit, gently spread.
- For the topping mix the cinnamon and sugar and sprinkle over the batter.
- Bake at 375 for 45-55 minutes
- Allow to cool and serve with ice cream or whipped cream.
