Easy Instant Pot Chicken Soup
This Chicken and Rice Soup is the most yummy and comforting soup. It is perfect for cold fall weather or when you feel a cold coming on.
Ingredients
- 2 tsp olive oil
- 1/2 onion chopped
- 2 medium carrots cut sliced thinly
- 1 large stalk celery diced
- 4 garlic cloves minced
- 1 tsp dried thyme
- 3/4 tsp poultry seasoning
- 6 cups chicken broth
- 1 lb chicken, breasts or pieces
- cooked rice
- 1 tsp salt
- 1/2 tsp ground pepper
Instructions
- Heat the olive oil in the instant pot on the saute feature, then add the onion, carrot and celery. Saute the vegetables until they start to soften.
- Add the garlic and dry herbs. Stir
- Pour in chicken broth.
- Add the chicken breasts, salt and pepper to the Instant Pot.
- Put the lid on the Instant Pot, and set to HIGH pressure using the manual setting. Set the time to 13 minutes.
- Next, prepare your rice according to instructions.
- When the time is up, use natural release for 10 minutes, then quick release.
- Remove chicken breast, shred and then return to Instant Pot. Serve over rice and enjoy!
Notes
I will regularly sub out the rice with orzo!
