Easy Instant Pot Chicken Soup

This Chicken and Rice Soup is the most yummy and comforting soup. It is perfect for cold fall weather or when you feel a cold coming on.

Ingredients

  • 2 tsp olive oil
  • 1/2 onion chopped
  • 2 medium carrots cut sliced thinly
  • 1 large stalk celery diced
  • 4 garlic cloves minced
  • 1 tsp dried thyme
  • 3/4 tsp poultry seasoning
  • 6 cups chicken broth
  • 1 lb chicken, breasts or pieces
  • cooked rice
  • 1 tsp salt
  • 1/2 tsp ground pepper

Instructions

  • Heat the olive oil in the instant pot on the saute feature, then add the onion, carrot and celery. Saute the vegetables until they start to soften.
  • Add the garlic and dry herbs. Stir
  • Pour in chicken broth.
  • Add the chicken breasts, salt and pepper to the Instant Pot.
  • Put the lid on the Instant Pot, and set to HIGH pressure using the manual setting. Set the time to 13 minutes.
  • Next, prepare your rice according to instructions.
  • When the time is up, use natural release for 10 minutes, then quick release.
  • Remove chicken breast, shred and then return to Instant Pot. Serve over rice and enjoy!

Notes

I will regularly sub out the rice with orzo!
