Heat the olive oil in the instant pot on the saute feature, then add the onion, carrot and celery. Saute the vegetables until they start to soften.
Add the garlic and dry herbs. Stir
Pour in chicken broth.
Add the chicken breasts, salt and pepper to the Instant Pot.
Put the lid on the Instant Pot, and set to HIGH pressure using the manual setting. Set the time to 13 minutes.
Next, prepare your rice according to instructions.
When the time is up, use natural release for 10 minutes, then quick release.
Remove chicken breast, shred and then return to Instant Pot. Serve over rice and enjoy!
