Herbed Ricotta Stuffed Peppers

Ingredients

  • 1 bag mini sweet peppers
  • 1 12 oz whole ricotta
  • 3 tsp basil chopped
  • 2 tsp parsley chopped
  • 1 tsp chives chopped, more for garnish
  • 1/2 tsp thyme
  • 1 tsp sea salt
  • 1/2 tsp garlic powder
  • 2 Tbsp grated Parmesan
  • 1 small lemon zested
  • 1 tsp olive oil more for garnish

Instructions

  • Wash and cut the peppers in half and remove the seeds.
  • Whip the remaining ingredients together.
  • Fill the peppers with the ricotta mixture and garnish with a drizzle of olive oil and chopped chives.
