Herbed Ricotta Stuffed Peppers
These Herbed Ricotta Stuffed Peppers are a fresh, no-cook appetizer perfect for summer!Crisp, sweet mini peppers are filled with a creamy ricotta mixture flavored with fresh herbs and a touch of lemon. - 1 bag mini sweet peppers
- 1 12 oz whole ricotta
- 3 tsp basil chopped
- 2 tsp parsley chopped
- 1 tsp chives chopped, more for garnish
- 1/2 tsp thyme
- 1 tsp sea salt
- 1/2 tsp garlic powder
- 2 Tbsp grated Parmesan
- 1 small lemon zested
- 1 tsp olive oil more for garnish
Wash and cut the peppers in half and remove the seeds.
Whip the remaining ingredients together.
Fill the peppers with the ricotta mixture and garnish with a drizzle of olive oil and chopped chives.
