Creamy Chicken Piccata
This creamy Chicken Piccata it a go to for serving guest in our household. It is fast and easy to prepare and pairs perfectly with pasta!
Ingredients
For The Chicken
- 4 boneless and skinless chicken breasts pounded flat
- 3 tbsp flour (all purpose or plain)
- 3 tbsp grated fresh Parmesan cheese
- 1/4 tsp dried thyme
- 1 tsp salt
- cracked pepper
For the Sauce
- 4 tbsp avocado oil
- 2 tbsp minced garlic
- 1 1/4 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup finely grated fresh Parmesan cheese
- 4 tbsp capers divided 2 tbsp to garnish
- 2-3 tbsp lemon juice of 1 lemon (adjust to your tastes)
- 2 tbsp fresh parsley
Instructions
- In a bowl, combine the flour, thyme, parmesan cheese, salt and pepper. Dredge chicken in the flour mixture; shake off excess and set aside.
- Heat 4 tablespoon of avocado oil in a large skillet over medium-high heat until. Fry the chicken until golden and cooked trough on each side a. Transfer to plate in warm oven (275 degrees)
- Reduce heat to medium-low, add garlic to pan and stir for 30 seconds, add the broth and cream.
- Bring the sauce to a gentle simmer; season with salt and pepper to taste; add in the parmesan cheese and capers. Continue cooking gently to thicken.
- Add the lemon juice, stir and continue to simmer for a minute. Return the chicken to the sauce and serve.
