Cheesy Scalloped Potatoes

Every time I make these potatoes, I wonder why I save them for special occasions—they're so easy to make and absolutely delicious!

Ingredients

  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 tsp salt divided
  • 1/4 tsp black pepper
  • 2 1/2 cup milk
  • 8 cup thinly sliced potatoes
  • 2 1/2 cup cheddar cheese shredded and divided

Instructions

  • Add the potatoes to a large pot with 1 tsp of the salt.
  • Bring the potatoes to a boil and remove from the heat, strain, and rinse in cold water.
  • Preheat the oven to 350 degrees
  • In a medium, pan saute the onion in the butter until softened, add the garlic and cook for 1 minute.
  • Stir in the flour and remaining salt and pepper. Cook for about 3 minutes.
  • Add the milk all at once, and stir over medium heat until thickened.
  • Add 2 cups of the cheese and stir until melted.
  • Remove from heat and set aside.
  • Place half the potatoes in a 3-quart buttered dish, cover with half the sauce, and repeat the process.
  • Top with cheese and bake for 35 – 40 minutes or until tender.
  • Remove from heat and let stand for 10 minutes before serving.
