
Cheesy Scalloped Potatoes
Every time I make these potatoes, I wonder why I save them for special occasions—they're so easy to make and absolutely delicious!
Ingredients
- 1 cup onion chopped
- 2 cloves garlic minced
- 1/4 cup butter
- 1/4 cup flour
- 2 tsp salt divided
- 1/4 tsp black pepper
- 2 1/2 cup milk
- 8 cup thinly sliced potatoes
- 2 1/2 cup cheddar cheese shredded and divided
Instructions
- Add the potatoes to a large pot with 1 tsp of the salt.
- Bring the potatoes to a boil and remove from the heat, strain, and rinse in cold water.
- Preheat the oven to 350 degrees
- In a medium, pan saute the onion in the butter until softened, add the garlic and cook for 1 minute.
- Stir in the flour and remaining salt and pepper. Cook for about 3 minutes.
- Add the milk all at once, and stir over medium heat until thickened.
- Add 2 cups of the cheese and stir until melted.
- Remove from heat and set aside.
- Place half the potatoes in a 3-quart buttered dish, cover with half the sauce, and repeat the process.
- Top with cheese and bake for 35 – 40 minutes or until tender.
- Remove from heat and let stand for 10 minutes before serving.
