Cheesy Scalloped Potatoes
Every time I make these potatoes, I wonder why I save them for special occasions—they're so easy to make and absolutely delicious!
Ingredients

onion
chopped

garlic

butter

flour

milk

thinly sliced potatoes
2 1/2
cup
cheddar cheese
shredded and divided
Instructions
Add the potatoes to a large pot with 1 tsp of the salt.
Bring the potatoes to a boil and remove from the heat, strain, and rinse in cold water.
Preheat the oven to 350 degrees
In a medium, pan saute the onion in the butter until softened, add the garlic and cook for 1 minute.
Stir in the flour and remaining salt and pepper. Cook for about 3 minutes.
Add the milk all at once, and stir over medium heat until thickened.
Add 2 cups of the cheese and stir until melted.
Remove from heat and set aside.
Place half the potatoes in a 3-quart buttered dish, cover with half the sauce, and repeat the process.
Top with cheese and bake for 35 - 40 minutes or until tender.
Remove from heat and let stand for 10 minutes before serving.
