BBQ Pulled Chicken
We love this Pulled Chicken Recipe in the summer. It's great for hosting parties or large groups of people! It's a go to for our 4th of July party.
Ingredients
Sauce
- 1 cup ketchup
- 1/3 cup cider vinegar
- 1/4 cup light brown sugar
- 1 tbsp yellow mustard
- 1 tbsp fresh lemon juice
- 2 tsp worcestershire sauce
- 2 tsp soy sauce
- salt
- pepper
Other ingredients
- 1 large whole chicken
- 1 cup diced onion
- 6 Kaiser rolls toasted
COLESLAW RECIPE (optional):
- 3 tbsp olive oil
- 3 tbsp cider vinegar
- 3 tbsp yellow mustard
- 1 tbsp honey
- 6 cups coleslaw mix
- salt
- pepper
Instructions
- Whisk together all the ingredients for the sauce.
- In a small bowl combine the ingredients for the rub. Thoroughly coat the chicken. Place chicken in a slow cooker. Sprinkle onions over chicken and cover with 1 cup of the sauce.
- Cover slow cooker and cook on high until chicken is done.
- Remove chicken and onions and shred chicken while still hot. Return chicken to slow cooker on warm setting.
- Add remaining sauce and toss.
- For the coleslaw, whisk together ingredients and toss in coleslaw with salt and pepper
- Serve chicken on rolls and top with coleslaw. `
