BBQ Pulled Chicken

We love this Pulled Chicken Recipe in the summer. It's great for hosting parties or large groups of people! It's a go to for our 4th of July party.

Ingredients

Sauce

  • 1 cup ketchup
  • 1/3 cup cider vinegar
  • 1/4 cup light brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp fresh lemon juice
  • 2 tsp worcestershire sauce
  • 2 tsp soy sauce
  • salt
  • pepper

Other ingredients

  • 1 large whole chicken
  • 1 cup diced onion
  • 6 Kaiser rolls toasted

COLESLAW RECIPE (optional):

  • 3 tbsp olive oil
  • 3 tbsp cider vinegar
  • 3 tbsp yellow mustard
  • 1 tbsp  honey
  • 6 cups  coleslaw mix
  • salt
  • pepper

Instructions

  • Whisk together all the ingredients for the sauce.
  • In a small bowl combine the ingredients for the rub. Thoroughly coat the chicken. Place chicken in a slow cooker. Sprinkle onions over chicken and cover with 1 cup of the sauce.
  • Cover slow cooker and cook on high until chicken is done.
  • Remove chicken and onions and shred chicken while still hot. Return chicken to slow cooker on warm setting.
  • Add remaining sauce and toss.
  • For the coleslaw, whisk together ingredients and toss in coleslaw with salt and pepper
  • Serve chicken on rolls and top with coleslaw. `
