BBQ Pulled Chicken
We love this Pulled Chicken Recipe in the summer. It's great for hosting parties or large groups of people! It's a go to for our 4th of July party.
Sauce
- 1 cup ketchup
- 1/3 cup cider vinegar
- 1/4 cup light brown sugar
- 1 tbsp yellow mustard
- 1 tbsp fresh lemon juice
- 2 tsp worcestershire sauce
- 2 tsp soy sauce
- salt
- pepper
Other ingredients
- 1 large whole chicken
- 1 cup diced onion
- 6 Kaiser rolls toasted
COLESLAW RECIPE (optional):
- 3 tbsp olive oil
- 3 tbsp cider vinegar
- 3 tbsp yellow mustard
- 1 tbsp honey
- 6 cups coleslaw mix
- salt
- pepper
Whisk together all the ingredients for the sauce.
In a small bowl combine the ingredients for the rub. Thoroughly coat the chicken. Place chicken in a slow cooker. Sprinkle onions over chicken and cover with 1 cup of the sauce.
Cover slow cooker and cook on high until chicken is done.
Remove chicken and onions and shred chicken while still hot. Return chicken to slow cooker on warm setting.
Add remaining sauce and toss.
For the coleslaw, whisk together ingredients and toss in coleslaw with salt and pepper
Serve chicken on rolls and top with coleslaw. `
