White Chicken Chili

We love this twist on traditional chili, it's full of flavor and goodness.

Ingredients

  • 3 cup chopped or shredded cooked chicken
  • 2 cans white beans
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 can corn drained
  • 2 tbsp butter
  • 1 medium onion chopped
  • 1 4 oz can chopped green chilies
  • 1 4 oz can chopped jalapenos
  • 4 cloves garlic chopped
  • 1 lime juiced
  • 2 tsp ground cumin
  • 1 tsp ancho chili
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne pepper

Toppings

  • sour cream
  • shredded cheese
  • chopped cilantro
  • diced avocado
  • corn chips

Instructions

  • Add the butter and onions to a dutch oven and saute for 3-5 minutes at medium heat until translucent.
  • While the onions are cooking puree 1 cup of the beans in a blender.
  • Add the garlic and cook for 30 seconds.
  • Add the rest of the ingredients except for the chicken and cream.
  • bring to a boil and reduce to a simmer until cooked through, 20-30 minutes.
  • Add the chicken and cream, cook for 5 minutes.
  • Serve with toppings of choice
