White Chicken Chili
We love this twist on traditional chili, it's full of flavor and goodness.
Ingredients
- 3 cup chopped or shredded cooked chicken
- 2 cans white beans
- 3 cups chicken broth
- 1 cup heavy cream
- 1 can corn drained
- 2 tbsp butter
- 1 medium onion chopped
- 1 4 oz can chopped green chilies
- 1 4 oz can chopped jalapenos
- 4 cloves garlic chopped
- 1 lime juiced
- 2 tsp ground cumin
- 1 tsp ancho chili
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
- 1/4 tsp cayenne pepper
Toppings
- sour cream
- shredded cheese
- chopped cilantro
- diced avocado
- corn chips
Instructions
- Add the butter and onions to a dutch oven and saute for 3-5 minutes at medium heat until translucent.
- While the onions are cooking puree 1 cup of the beans in a blender.
- Add the garlic and cook for 30 seconds.
- Add the rest of the ingredients except for the chicken and cream.
- bring to a boil and reduce to a simmer until cooked through, 20-30 minutes.
- Add the chicken and cream, cook for 5 minutes.
- Serve with toppings of choice
