Simple Chicken Pasta
My version of CACIO E PEPE, A simple week night meal that you can have on the table in 30 minutes. I've added Chicken and broccoli, to round it out a little but sometimes we just do pasta!
Ingredients
- 1-2 lbs chicken breast
- 1 pkg spaghetti noodles
- 1-2 tsp blacken seasoning to taste
- 6 tbsp olive oil, divided
- 6 tbsp butter
- chopped Garlic
- 16 oz frozen broccoli
- Parmesan cheese to taste
- salt to taste
- pepper flakes to taste
Instructions
- Start oven to 350
- Season chicken breast with blacken seasoning Add 3 T of oil to hot, oven safe skillet, add chicken and sear on each side. Place skillet with chicken in oven for 12 – 17 minutes depending on thickness.
- While chicken is searing prep Pot with water for pasta, bring to boil and cook al' dente according to box.
- While chicken is cooking, cook the frozen broccoli.
- Pull chicken out to rest while you make the sauce.
- At this step you can use the same pan the chicken was in to make the sauce and get all of the delishisness from the drippings, but you will lose the look and simple flavor of CACIO E PEPE, or you can start with a new large skillet.
- Sauce Add remaining oil and half of the butter to the pan at medium heat when melted add crushed garlic, saute for 30 seconds to 1 minute, add broccoli and salt.
- Pour in pasta and stir, add about 2/3 cup of pasta water, turn heat down to low.
- Slice chicken, add the remaining butter to the pasta, stir as its melting and add a little more pasta water if need to create a nice"sauce" put chicken on top and add as much Parmesan and pepper flakes as you can stand!
