Shepards Pie
This is one of our favorite comfort foods! It's technically Cottage pie, Shepards pie is made with lamb. Use whatever have.
Ingredients
Mashed Potatoes
- 8-10 large red potatoes
- 1/2 – 1 cup milk
- 4 Tbsp butter
- salt & pepper to taste
Meat Filling
- 1 lb ground beef
- 1 onion diced
- 1 tsp salt
- pepper to taste
- 4 Tbsp butter
- 4 Tbsp flour
- 1 cup sliced mushrooms
- 2 cups beef stock
- 1 tsp thyme
- 1 tsp parsley
- 1 tsp onion powder
- 1/2 tsp celery powder
- 1 Tbsp minced garlic
- 1/2 cup celery
- 1 cup frozen peas and carrots thawed
- 1 cup shredded cheese
Instructions
- Chop potatoes add to pot and cover with water, add 1 t of salt and bring to boil and cook until fork tender.
- While potatoes are cooking brown ground meat and 1 tsp of salt and pepper to taste.
- When ground beef is cooked remove from pan and add 4 Tbs of butter and onions, sauté until soft.
- When potatoes are cooked remove from stove and drain. Put back in pot and mash, add 4 Tbs of butter, salt and pepper to taste. I slowly add milk until potatoes are thick and creamy.
- When the onions are soft add mushrooms, cook until softened. Add flour and cook for 3-4 minutes stirring constantly, pour in beef broth and continue to stir. Add spices, celery, peas and carrots and salt and pepper to taste. Pour meat mixture into a casserole dish and top with mashed potatoes and cheese. Bake at 350 until hot and bubbly, 30-45 minutes.Top with fresh parsley or chives.
