
Peanut Butter and Jelly Bars
These Peanut Butter and Jelly Bars are a nostalgic twist on the classic sandwich—soft, chewy, and layered with creamy peanut butter and sweet jelly. With a buttery crumble on top and a rich, nutty base, they’re the perfect treat for lunchboxes, after-school snacks, or casual gatherings. Easy to make and always a crowd-pleaser, they’re a little taste of childhood in every bite.
Ingredients
- 1/2 cup butter
- 1 cup peanut butter
- 2/3 cup sugar
- 1 egg
- 3/4 tsp vanilla extract
- 1 tsp sea salt plus more to sprinkle on top(I used a Celtic flake for sprinkling)
- 2 cup all purpose flour
- 1/4 tsp baking powder
- 1 cup jam or jelly of choice
Instructions
- Preheat oven to 350 degrees.
- Line an 8×8 pan with parchment or butter the pan.
- Cream together the butter, peanut butter, and sugar.
- Add the egg and vanilla extract and beat until combined.
- Add the flour, salt, and baking powder to the peanut butter mixture and mix until well combined. Mixture will be crumbly
- Press 2/3 of the mixture into the prepared pan.
- Spoon the jelly evenly over the peanut butter base.
- Crumble the remaining peanut butter mixture over the jelly.
- Bake for 35-45 minutes or until the jelly is bubbling in the center of the bar.
