Peanut Butter and Jelly Bars
These Peanut Butter and Jelly Bars are a nostalgic twist on the classic sandwich—soft, chewy, and layered with creamy peanut butter and sweet jelly. With a buttery crumble on top and a rich, nutty base, they’re the perfect treat for lunchboxes, after-school snacks, or casual gatherings. Easy to make and always a crowd-pleaser, they’re a little taste of childhood in every bite.
- 1/2 cup butter
- 1 cup peanut butter
- 2/3 cup sugar
- 1 egg
- 3/4 tsp vanilla extract
- 1 tsp sea salt plus more to sprinkle on top(I used a Celtic flake for sprinkling)
- 2 cup all purpose flour
- 1/4 tsp baking powder
- 1 cup jam or jelly of choice
Preheat oven to 350 degrees.
Line an 8x8 pan with parchment or butter the pan.
Cream together the butter, peanut butter, and sugar.
Add the egg and vanilla extract and beat until combined.
Add the flour, salt, and baking powder to the peanut butter mixture and mix until well combined. Mixture will be crumbly
Press 2/3 of the mixture into the prepared pan.
Spoon the jelly evenly over the peanut butter base.
Crumble the remaining peanut butter mixture over the jelly.
Bake for 35-45 minutes or until the jelly is bubbling in the center of the bar.
