On New Years eve we had close friends over for dinner and game night. We had fast food! We had a delicious Guinness Beef stew made in the instant pot from simplyrecipes.com A humble yet satisfying meal served with sour dough from the grocery store and leftover berry cobbler, it’s okay to host a meal with simple fare, sometimes its even better because the focus is on conversation not your cooking ability. As you begin to consider hosting in your home, remember to have those people over that make you laugh and give you life, as important as it is for us to get outside of our comfort zone and invite new people to our table its also important to have stress free, fun with our our close community.
As we took down the tree and began winter clean up, we have had some full days with more to follow. We are planning to launch the podcast in the nest week, and we will be very consumed with launching well. I see a few more days of “fast food” in our future. I’m putting a roast in the crock pot for dinner tonight, I’ll serve it with leftover mashed potatoes, If I didn’t have them, I would be be pulling out a box instant potatoes(yep!). I will add leftover rolls and a veggie, total hands on time will be under 30 minutes.
Tomorrow night, will be one more fast food meal, I will use the leftover roast for Shredded Beef Taquitos served with guacamole, sour cream, fermented salsa and a side of refried beans.
I hope that the last few post will inspire you to come up with your own “fast food” recipes. I believe anything that we eat that comes from our kitchen is so much better than what we eat when we eat out. With a little bit of preparation we can have options in our pantry to put a meal on the table at the drop of a hat.
