Creamy Chicken Soup

What is it about cream? It has a way of making everything taste a little more special. This is a simple chicken soup with just a touch of cream. You can add noodles or gnocchi to make it more filling, but it tastes delicious with just the vegetables.

Ingredients

  • 3 carrots sliced
  • 3 celery stalks sliced
  • 1 onion chopped
  • 5 cloves garlic minced
  • 1 Tbs butter
  • 1 Tbs olive oil
  • 1/2 tsp Italian seasoning
  • 1/2 tsp dried parsley
  • 1 tsp salt more to taste
  • 1/4 tsp pepper
  • 1 1/2 lbs chicken breast
  • 6 cup chicken broth
  • 3/4 cup heavy cream
  • 1/4 cup lemon juice
  • salt and pepper to taste
  • parmesan to garnish
  • fresh parsley to garnish

Instructions

  • Add butter and olive oil to a Dutch oven or heavy pot.
  • On medium heat, add the onions, celery, and carrots. Sauté until onions are tender.
  • Add the minced garlic and cook for about a minute while stirring.
  • Add the broth, spices, and chicken to the pot.
  • Bring to a simmer, reduce heat to medium low, cover and cook until the chicken is done. About 20 minutes.
  • Remove the chicken and chop or shred it. Return the chicken to the pot and add the heavy cream. Stir well
  • Add the lemon juice and stir, add the salt and pepper to taste.
  • Serve and garnish with Parmesan and fresh parsley.
