
Creamy Chicken Soup
What is it about cream? It has a way of making everything taste a little more special. This is a simple chicken soup with just a touch of cream. You can add noodles or gnocchi to make it more filling, but it tastes delicious with just the vegetables.
Ingredients
- 3 carrots sliced
- 3 celery stalks sliced
- 1 onion chopped
- 5 cloves garlic minced
- 1 Tbs butter
- 1 Tbs olive oil
- 1/2 tsp Italian seasoning
- 1/2 tsp dried parsley
- 1 tsp salt more to taste
- 1/4 tsp pepper
- 1 1/2 lbs chicken breast
- 6 cup chicken broth
- 3/4 cup heavy cream
- 1/4 cup lemon juice
- salt and pepper to taste
- parmesan to garnish
- fresh parsley to garnish
Instructions
- Add butter and olive oil to a Dutch oven or heavy pot.
- On medium heat, add the onions, celery, and carrots. Sauté until onions are tender.
- Add the minced garlic and cook for about a minute while stirring.
- Add the broth, spices, and chicken to the pot.
- Bring to a simmer, reduce heat to medium low, cover and cook until the chicken is done. About 20 minutes.
- Remove the chicken and chop or shred it. Return the chicken to the pot and add the heavy cream. Stir well
- Add the lemon juice and stir, add the salt and pepper to taste.
- Serve and garnish with Parmesan and fresh parsley.
