Herbed Ricotta Stuffed Peppers
These Herbed Ricotta Stuffed Peppers are a fresh, no-cook appetizer perfect for summer! Ingredients
- 1 bag mini sweet peppers
- 1 12 oz whole ricotta
- 3 tsp basil chopped
- 2 tsp parsley chopped
- 1 tsp chives chopped, more for garnish
- 1/2 tsp thyme
- 1 tsp sea salt
- 1/2 tsp garlic powder
- 2 Tbsp grated Parmesan
- 1 small lemon zested
- 1 tsp olive oil more for garnish
Instructions
- Wash and cut the peppers in half and remove the seeds.
- Whip the remaining ingredients together.
- Fill the peppers with the ricotta mixture and garnish with a drizzle of olive oil and chopped chives.
