Cast Iron Steak

Sometimes I think we overthink how good simple food can be. Here is the most simple and delicious steak recipe.

Ingredients

  • 2 Kansas City strip steaks
  • 1 Tbsp avocado oil
  • 1 + tsp good quality salt
  • pepper to taste
  • 2 Tbsp butter
  • 2 or more whole garlic cloves
  • 2 sprigs rosemary or thyme

Instructions

  • Remove steak from the refrigerator at least 1 hour before cooking. Pat dry with paper towels and season liberally with salt and pepper.
  • Heat cast iron skillet until screaming hot, add oil and sear steaks on all sides.
  • Once seared turn your heat down to medium and add the butter, garlic cloves and herbs. Baste steak with butter for 2 minutes.
  • Place the cast iron pan in a preheated 350 degree oven for 8 minutes.
    We start testing the temperature at 8 minutes. Medium is an internal temperature of 145, remove from oven at 139 degrees for medium. Move steaks to a platter, cover with foil and allow to rest for 10 minutes.
