Cast Iron Steak
Sometimes I think we overthink how good simple food can be. Here is the most simple and delicious steak recipe.
- 2 Kansas City strip steaks
- 1 Tbsp avocado oil
- 1 + tsp good quality salt
- pepper to taste
- 2 Tbsp butter
- 2 or more whole garlic cloves
- 2 sprigs rosemary or thyme
Remove steak from the refrigerator at least 1 hour before cooking. Pat dry with paper towels and season liberally with salt and pepper.
Heat cast iron skillet until screaming hot, add oil and sear steaks on all sides.
Once seared turn your heat down to medium and add the butter, garlic cloves and herbs. Baste steak with butter for 2 minutes.
Place the cast iron pan in a preheated 350 degree oven for 8 minutes.We start testing the temperature at 8 minutes. Medium is an internal temperature of 145, remove from oven at 139 degrees for medium. Move steaks to a platter, cover with foil and allow to rest for 10 minutes.
