Chili
This is a recipe that I use to can homemade chili. I've converted the recipe to make it on the stove top.
Ingredients
- 2 lbs ground beef
- 3 tbsp oil
- 1 large onion diced
- 2 finely chopped jalapeño peppers
- 3 garlic cloves minced
- 1 can diced tomatoes
- 1 can rotel with liquid
- 1 can tomato paste
- 3 cups water
- 5-6 tsp better than beef broth
- 2 cans pinto beans rinsed
- 1/4-1/3 cup chili powder
- 1 tbsp cumin
- 1 tsp cayenne pepper
- salt and pepper to taste
Instructions
- Put oil in pot and saute onions, when soft add jalapeño and garlic.
- Sauté for 2 minutes
- Add ground beef mince while browning.
- When browned, add tomatoes, rotel, tomato paste, water, Better than Broth, beans and spices.
- Stir well, bring to boil and then reduce heat to simmer.
- Simmer for 45 minutes to an hour .
Notes
This is such a simple recipe that can be adapted to your tastes. My version is pretty spicy so taste appropriately.
