Chili

This is a recipe that I use to can homemade chili. I've converted the recipe to make it on the stove top.

Ingredients

  • 2 lbs ground beef
  • 3 tbsp oil
  • 1 large onion diced
  • 2 finely chopped jalapeño peppers
  • 3 garlic cloves minced
  • 1 can diced tomatoes
  • 1 can rotel with liquid
  • 1 can tomato paste
  • 3 cups water
  • 5-6 tsp better than beef broth
  • 2 cans pinto beans rinsed
  • 1/4-1/3 cup chili powder
  • 1 tbsp cumin
  • 1 tsp cayenne pepper
  • salt and pepper to taste

Instructions

  • Put oil in pot and saute onions, when soft add jalapeño and garlic.
  • Sauté for 2 minutes
  • Add ground beef mince while browning.
  • When browned, add tomatoes, rotel, tomato paste, water, Better than Broth, beans and spices.
  • Stir well, bring to boil and then reduce heat to simmer.
  • Simmer for 45 minutes to an hour .

Notes

This is such a simple recipe that can be adapted to your tastes. My version is pretty spicy so taste appropriately.
