
Peach Scones
Nothing says summer like peaches! If you’ve got a few ripe ones left over, this recipe is just the thing.
Ingredients
Scones
- 3 cup Flour
- 1 Tbsp Baking powder
- 1 tsp Baking soda
- 1/4 cup Sugar
- 1/4 tsp Salt
- 1 tsp Cinnamon
- 1 Stick Cold butter grated
- 1 cup Peaches chopped small
- 1 cup Milk
- 1 Egg beaten
Icing
- 1 cup Powdered sugar
- Reserved peach juice
- Milk

- Preheat oven to 450 ℉
- Place the chopped peaches in a sieve or colander, set over a bowl, and let the juice drain.
- In a large bowl, mix together flour, baking powder, baking soda, sugar, and salt. Mix with a fork.
- Add butter and blend with a pastry blender, or fingers, until butter is evenly dispersed.
- Pat the peaches with a paper towel.
- Add peaches and milk and stir until evenly moistened.
- Turn the dough onto a floured surface and gently knead until it comes together into a dry dough.
- Cut the dough in half and pat each piece into a disk. Lightly roll into 6-inch circles, place on an ungreased baking sheet, and brush tops with beaten egg. Score each circle into 6 wedges
- Bake 20 minutes, until tops are brown. Cool
Icing
- Mix the reserved peach juice with powdered sugar. Add milk, a little at a time, until the glaze is thin enough to drizzle.
- When the scones are cool, drizzle with the glaze. Let it set, then enjoy.
