Fried Rice

If I have leftover rice, this is my go-to. It’s so easy to make and even easier to customize!
Want to take it up a notch? Fry up a pork chop and slice it on top; it looks downright gourmet. Or keep it simple and use whatever protein you have on hand. Either way, it’s quick, easy, and always delicious.

Ingredients

  • 3 medium carrots chopped small or shaved
  • 1 cup frozen peas
  • 1 onion chopped
  • 3 eggs whisked
  • 3 cup pre-cooked and cooled rice
  • 1-2 cups chopped protein
  • 5 Tbs soy sauce
  • 1 1/2 Tbs sesame oil
  • 1 Tbsp garlic powder Fresh is fine, use as much as you like:)
  • 1 Tsp ginger dried or fresh
  • 2-3 Tbsp avocado oil
  • 1-2 green onion sliced to garnish
  • sesame seeds to garnish
  • red peper flakes to garnish

Instructions

  • Heat a wok or large skillet to medium-high heat. Add the oil and the carrots and onions.
  • When the carrots and onions have softened some, add the peas, cook a few more minutes, and add the rice and protein.
  • Add in the soy sauce, sesame oil, and spices, and mix well.
  • Taste and add more soy sauce and spice as needed.
  • Move the rice and vegetable mixture up the sides of the wok. If needed, add a little more oil, add the eggs, and scramble. Once the eggs are cooked, combine them with the rice mixture.
  • Garnish with green onion, sesame seeds, and red pepper flakes. Enjoy!
