Fiesta Corn Pasta Salad

Ingredients

Salad

  • 2 15.6 oz. cans corn(drained) 3 cups fresh or frozen may be substituted
  • 2 cups bow tie pasta uncooked
  • 1/3 cup chopped green onions
  • 1/2 cup chopped cilantro
  • 2 tbsp chopped jalapeno pepper or to taste
  • 8 strips bacon cooked and chopped
  • 1 large avocado chopped
  • 1 cup cherry tomatoes halved

Dressing

  • 1/2 cup Mayo
  • 2 limes squeezed and zested
  • 1/4 cup ground cumin
  • 1/2 tsp paprika
  • 1 tsp chili powder
  • 1 tsp sriracha
  • salt and pepper to taste

Instructions

For the Salad

  • Prepare pasta according to directions on package
  • Drain pasta and run under cold water to stop cooking.
  • Drain corn and pour into a screaming hot cast iron pan to "blacken"
  • Remove corn from pan once blackened and cool
  • Add pasta, corn, chopped onions, chopped jalapeno, chopped bacon, chopped avocado and chopped cilantro to a large bowl.

For the Dressing

  • To the mayo add lime juice and zest, spices, salt and pepper and the sriracha
  • Mix well and pour over salad
  • Toss gently
