Fiesta Corn Pasta Salad
Ingredients
Salad
- 2 15.6 oz. cans corn(drained) 3 cups fresh or frozen may be substituted
- 2 cups bow tie pasta uncooked
- 1/3 cup chopped green onions
- 1/2 cup chopped cilantro
- 2 tbsp chopped jalapeno pepper or to taste
- 8 strips bacon cooked and chopped
- 1 large avocado chopped
- 1 cup cherry tomatoes halved
Dressing
- 1/2 cup Mayo
- 2 limes squeezed and zested
- 1/4 cup ground cumin
- 1/2 tsp paprika
- 1 tsp chili powder
- 1 tsp sriracha
- salt and pepper to taste
Instructions
For the Salad
- Prepare pasta according to directions on package
- Drain pasta and run under cold water to stop cooking.
- Drain corn and pour into a screaming hot cast iron pan to "blacken"
- Remove corn from pan once blackened and cool
- Add pasta, corn, chopped onions, chopped jalapeno, chopped bacon, chopped avocado and chopped cilantro to a large bowl.
For the Dressing
- To the mayo add lime juice and zest, spices, salt and pepper and the sriracha
- Mix well and pour over salad
- Toss gently
