Refrigerator Rolls

This simple brioche-style bread is soft, rich, and perfect for making ahead. The dough comes together easily the day before and rises overnight in the fridge, making it ideal for slow mornings or holiday meals. A tried-and-true family favorite.
Servings: 36 rolls

Ingredients

  • 2 pkg Yeast
  • 3 cup warm water
  • 2/3 cup melted butter at room temperature
  • 1/2 cup sugar
  • 4 tsp salt
  • 2 eggs beaten
  • 10 cup flour

Instructions

  • Add sugar to the warm water, sprinkle the yeast over the water, and allow to bloom(foam up).
  • Add the oil, salt, and eggs and mix well.
  • Stir in 6 cups of the flour, mixing well.
  • Add 2-3 more cups of flour until the dough can be kneaded.
  • Using the remaining flour as needed, knead the dough for 8-10 minutes.
  • Return the dough to the bowl and cover with plastic wrap. Place it in the refrigerator overnight.
  • Preheat oven to 350℉
  • Butter 1 9×13 pan and 2 pie plates
  • Divide into 36 balls and place 20 rolls in the 9×13 pan, 8 rolls each, in the 2 pie plates.
  • Bake at 350℉ for 20 minutes. Top with melted butter when you remove the rolls from the oven. Serve and enjoy.
