
Green Bean Casserole
This is a from-scratch green bean casserole with all of the flavor and none of the junk. No mushy onions here—just a creamy, rich sauce, green beans, and those homemade crispy onions and crisp bacon that are just plain yum.
Ingredients
- 1/2 lb bacon chopped, cooked and divided in half
- 2 small onions
- 1/2 cup flour
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp dried parsley
- 1/2 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 8-10 mushrooms sliced
- 1/4 cup milk
- 1 1/4 cup broth
- 1/3 dried soup mix I use the one from healthyhomesteader@Instagram
- 4 Tbsp butter
- avocado oil as needed
- 4 cups cooked or canned green beans
Instructions
- Cut the bacon into small chunks and cook until crispy.
- Remove the bacon from the pan and save the fat.
- Chop 1 onion and cut the other onion in half, and slice each half thinly.
- Sauté the chopped onion until it is soft and translucent.
- While the onion is cooking, add the spices to the flour and blend. Pour the milk into a flat container and put the sliced onions in the milk.
- Remove the onions from the milk and dredge them through the flour mixture. Set aside until the chopped onions are cooked.
- Pre-heat your oven to 350℉
- In another skillet, add the butter and mushrooms and cook the mushrooms until they are golden brown. It helps to have the pan hot when you add the mushrooms. Set aside
- When the chopped onions are softened, remove from the pan and set aside. Add a little more oil to the pan if needed—you’ll want at least ¼ inch of oil covering the bottom. Turn the heat to medium-high and fry the onions in small batches, cooking them until they’re crisp but not too brown. If the oil becomes too hot, remove the pan from the heat momentarily to cool the temperature before continuing.
- Add the broth and soup mix to a pan and bring it to a boil. Reduce the heat and let it simmer for 2–3 minutes, or until it thickens to a cream-soup consistency. Stir in the mushrooms. (You can use any cream soup, this is a homemade cream of mushroom option)
- Add the green beans, chopped onions, half of the bacon, and the mushroom soup to a casserole dish and mix. Top with the remaining bacon and the fried onion strings.
- Bake at 350℉ for 20-30 minutes or until bubbly. Serve and enjoy!
