Do you ever find yourself looking at the clock at 6:30 p.m. and realizing you don’t have a plan for dinner? That’s often when I find myself needing a simple pasta recipe or something quick we can pull together without much thought.

Between caring for the farm, planning our week, and supporting our family business, there are plenty of days when the hours seem to disappear. Before I know it, dinnertime is here and I’m scrambling to figure out what we’re going to eat.

Over the last few years, we’ve made a conscious effort to eat out less and skip fast food whenever possible. The reality, though, is that busy seasons require flexibility, and sometimes something has to give.

I’ve been working on shifting my mindset around what dinner needs to look like at home. Not every meal has to be elaborate to be nourishing.

Some days, it just needs to be fast, simple, and made with ingredients I feel good about. These meals may not be perfect, but they’re still better than fast food—and often better than eating out.

And most importantly, they still bring us to the table together.
