On New Year’s Eve, we had close friends over for dinner and a game night. It was one of those evenings where everything was simple, relaxed, and exactly what we needed.

We had fast food, a delicious Guinness beef stew made in the Instant Pot (from simplyrecipes.com), sourdough bread from the grocery store, and leftover berry cobbler.

And honestly—it was perfect.

Sometimes hosting doesn’t need to be elaborate. Simple meals can be some of the most meaningful, because the focus stays on conversation, connection, and the people around the table—not your cooking ability.

As we took down our Christmas tree and began winter clean-up, we’ve had some very full days—and more are coming.

We’re preparing to launch the podcast in the next week, which means our days are especially focused and full.

In seasons like this, I know we’ll lean on a few more “fast food” meals at home.

And I’m learning to be okay with that.

Tonight, I’m putting a roast in the slow cooker for dinner. We’ll serve it with leftover mashed potatoes—or if I didn’t have those, I’d happily use instant potatoes (yes, really!).

I’ll add leftover rolls and a vegetable. Total hands-on time is under 30 minutes.

Tomorrow night will be another simple meal. I’ll use the leftover roast for shredded beef taquitos served with guacamole, sour cream, fermented salsa, and refried beans.

These are not complicated meals—but they work. They feed people well, and they keep life moving without stress.
