This little nugget of a shortbread cookie is a traditional cookie I always include at Christmas time. It is known by different names all around the world. Swedish Heirloom, Mexican Wedding Cake, Russian Tea Cake, Snowball cookies and the list goes on. It's perfect with a cup of tea or coffee and will enhance any cookie tin.
Ingredients
2cupall purpose flour
1cuppowdered sugar
1/4teaspoonsalt
1cup butter
1Tbsvanilla extract
1cup finely chopped almonds
2-3Tbspowdered sugarfor dusting
Instructions
Pre heat oven to 325 degrees
In a large bowl combine flour, 1 cup powdered sugar and salt.
Cut butter into chunks and add to dry ingredients.
Using a pastry blender cut in butter until mixture resembles course crumbs.
Add the vanilla extract and almonds to the crumb mixture and knead by hand until it forms a smooth dough.
Shape rounded teaspoons of dough into round balls, about 1 inch in size.
Place 1 inch apart on an ungreased baking sheet.Bake at 325 degrees for 12-15 minutes, or until set. Do not brown.
Move to a cooling rack, when cool enough to handle roll in powdered sugar.
