Years ago, a friend served a cinnamon crumb coffee cake that was so good! When I raved about it, she told me it was just a simple box mix from the grocery store. For years I served this as a special breakfast treat. But as we’ve been more intentional to know what’s in our food, I like to find from scratch recipes to use with better ingredients. This Coffee Cake recipe is an easy swap for the boxed mix one, and just as good if not better!

Ingredients
STREUSEL
1 1/2cup all purpose flour
1cuppacked brown sugar
3tspground cinnamon
1/2tsp salt
3/4cup(1 1/2 sticks) butter (COLD) cut into small pieces
Cake
1/2cup butter softened to room temperature
2cupall purpose flour
1 1/4tspbaking powder
1/2tspbaking soda
1/2tspsalt
1/2 tspground cinnamon
1cupgranulated sugar
2largeeggs
1 1/2tsp vanilla extract
1cupsour cream
Glaze
1cuppowdered sugar
2tbsmilk
1/2tspvanilla
Instructions
Preheat the oven to 350°F. Butter a 9×9 baking pan and set aside.
STREUSEL
Combine the flour, sugar, cinnamon, salt and butter in a small bowl. Mix until it forms pea-sized clumps(I use my hands). Refrigerate while preparing the cake.
CAKE
Combine the dry ingredients in a mixing bowl(flour, baking powder, baking soda and salt), mix to combine and aside.
In a large bowl (I use my kitchen aid), beat together the butter and sugar until fluffy. Beat in one egg at a time, add the vanilla extract and combine.
Add 1/2 of the flour mixture and mix well. Add in 1/2 of the sour cream, mix until combine. Repeat with remaining flour and sour cream.
To a prepared pan add half of the cake batter, spreading evenly. Add half the streusel, spreading in an even layer.
Top with remaining cake batter and spread remaining streusel on top.
Bake for about 55 minutes. Insert a toothpick into the center to check for doneness, it should come out clean or with a few moist crumbs. Don't over bake.
Whisk together the glaze.
Allow the cake to cool and then drizzle with the glaze
