Preheat oven to 450 degrees
To a large pan add the avocado oil and onion, saute on medium heat for 5 minutes
Add the beef to the pan and brown, cook thoroughly
While the beef is cooking add the better than beef broth to the hot water and stir to dissolve
Add the garlic and stir for about a minute
Add the flour and cook while stirring constantly for about 4 minutes
Quickly pour in the broth and stir continually until the gravy is well blended and thickening, add the mixed vegetables
Add the Worcestershire sauce, Thyme, oregano and salt and pepper
Remove the filling from the heat and allow it to cool down. If the filling is too hot it will soften your pastry dough making it hard to work with.
Roll out one pie crust at a time, I use a cereal bowl as my template, place the bowl on the pastry and using a paring knife cut out your circle, I usually get three circles out of my dough. Remove unused dough and set aside
Beat the egg and 1 Tbsp of water together and using a pastry brush go around the edge of each circle
Add 1 heaping Tbsp of filling just left off the center of the pastry, gently fold the pastry over the filling making a crescent shape. Use a fork to crimp the edges and place on a parchment lined sheet pan
Repeat the steps until you have used all of the dough and filling. I get 12 hand pies.
When I have 6 hand pies on the baking sheet I bake them for 15-20 minutes or until golden brown
